Avocado Dessert Pt. 2

Some may be used to avocado in savory dishes, but in a lot of cultures avocado in sweets is the norm! Here I’m making a very simple coconut-based tapioca dessert topped with nata de coco and avocado.

Canned coconut milk
Sugar
Tapioca pearls
Nata de coco (coconut jelly)
Diced avocado
Ice

In a small saucepan, combine the coconut milk and a few spoonfuls of sugar, depending on your taste preference. Bring to a simmer over low heat and cook for about 5 minutes, stirring to dissolve the sugar. Pour the coconut syrup into a bowl and transfer to the refrigerator to cool. Gently boil the tapioca pearls until tender, then drain and rinse to remove the starch. Add nata de coco, tapioca, and avocado to a dessert bowl, then pour in the coconut syrup. Add a few pieces of ice to keep it cold and enjoy!
